We know and love Rach's 30 Minute Meals, which returned to Food Network this week after almost 20 years, but we had no idea 3-minute meals were a thing!
Last night, Rach appeared on Late Night with Seth Meyers and took quick, easy cooking to a whole new level by making chicken and chorizo quesadillas in just three minutes.
She brought a pitcher of her husband John's famous elderflower liqueur margaritas with her to make the task a little easier—or harder.
The quesadillas were Rach's first-ever attempt at a 3-minute meal, she told Seth. The challenge started out well, with Rach and Seth warming up chorizo, rotisserie chicken, and fire-roasted corn from the freezer section in a skillet.
Then Seth started doing a little more sipping than cooking, causing him to fall behind. He struggled to put the lid on his food processor correctly to make chimichurri, but Rach luckily had a bowl of sauce ready for him.
It was a rush to finish in time, but Rach managed to warm a tortilla, melt cheese, add her toppings, and plate the quesadilla before the three minutes ended. Seth was right behind her with a (mostly) warm meal.
Admittedly, the process was sped up by having the ingredients fully prepared. "This is great because all the stuff in my house is already like this, so it will only take three minutes," Seth joked.
Regardless, the food was delicious and easy to make, and the challenge was certainly enjoyable to watch. Cheers to that!
