For the peach, prosciutto, pesto & goat cheese skillet pizza:

  • Flour, for rolling the dough
  • 1 lb. pizza dough
  • 1/2 cup refrigerated pesto
  • 4 oz. goat cheese
  • 2 oz. thinly sliced prosciutto
  • 1/2 large peach

For the teriyaki pork & pineapple kebabs:

  • 1 lb. pork tenderloin
  • 1 small red onion
  • 3/4 lb. peeled fresh pineapple
  • 3/4 cup plus 1 tbsp. store-bought teriyaki sauce
  • 3/4 lb. sugar snap peas

For the grilled halibut with strawberry salad:

  • 3 tbsp. EVOO
  • 1 red onion
  • 2 tbsp. balsamic vinegar
  • 1/2 tsp. sugar
  • 4 6-8 ounces halibut fillets 
  • Salt and pepper
  • 1 1/2 cups hulled and halved strawberries 
  • 1 head red leaf lettuce

For the nectarine salad with pepitas:

  • 1 small shallot
  • 2 tbsp. EVOO
  • 2 tbsp. honey
  • 2 tsp. lime zest
  • 3 tbsp. lime juice
  • 2 nectarines
  • 4 cups mixed greens
  • 3 tbsp. salted roasted pepitas

For the meat lover's burger:

  • 2 ripe plum tomatoes sliced 1/2 inch thick
  • Sprinkle of oregano
  • Salt and pepper
  • EVOO
  • 1/4 lb. pancetta, speck or bacon
  • 1 lb. ground beef sirloin
  • 2 large cloves garlic minced or grated
  • A handful flat-leaf parsley
  • About 1/8 pound spicy salami pieces, soppressata bits or hot ham ends
  • 1/4 lb. ham, prosciutto or prosciutto cotto ends
