For the pan-fried chicken: 

  • Chicken stock
  • Corn grits (not instant)
  • Canned creamed corn
  • Grated cheddar
  • Seasoned dry breadcrumbs
  • Buttermilk
  • Poultry seasoning
  • 4 boneless, skinless chicken thighs (4 oz. each)
  • Olive oil
  • 1/2 lb. mustard greens
  • 2 cloves of garlic

For the steak:

  • 2 strip steaks (1 1/2 inches thick; about 1 lb. each)
  • Ground cumin
  • Garlic powder
  • Sweet potatoes (about 7 oz. each)
  • Olive oil
  • Ground chipotle powder
  • Mayonnaise
  • Sour cream
  • Hot sauce

For the pasta: 

  • Salt
  • 1 lb. paccheri or rigatoni
