Rach's Sunday Dinner: Carnitas Tacos with Rice & Beans
For when you have more than 30 minutes.
Over the years, I've made carnitas a bunch of times, but this particular version I cooked for our friend/member of our "family" Tommy just after our house burned down last August. It was during the pandemic so he wasn't allowed inside, but boy, he had fun eating this Mexican-inspired feast outside—especially after John mixed him a margarita.
