Fish Tacos with Corny Guac

Turkey Cheeseburgers with Beer-B-Q Sauce on Pretzel Rolls
Serve these bountiful burgers with a lager or pale ale to compliment the Beer-B-Q sauce.
Break it Down
Add the Worcestershire, vinegar and brown sugar to the cooked bacon; stir until the sugar dissolves.
Add the beer; cook until the sauce is reduced to 1/4 cup, 3 to 4 minutes.
In a large bowl, combine the turkey, mustard, parsley and thyme; season with salt and pepper. Form into 6 patties.
During the last few minutes of cooking, add the cheese; cover to melt.
While the patties are cooking, brush the tops of the rolls with water; sprinkle with kosher salt.
Divide the patties among the roll bottoms. Add pickles, lettuce, onion, tomato (seasoned with salt and pepper) and roll tops.

Break it Down
In a large bowl, whisk the lemon juice, 3 tbsp. EVOO, vinegar, mustard and sugar; season with salt and pepper. Toss with the drained potatoes, celery, shallots and tarragon. Season.
In a shallow bowl, whisk the eggs.
Coat the fish in the egg, then dredge in the almonds.
Divide the lettuce among plates; top with the fish. Serve with potato salad and lemon wedges.

Chicken Francese with Grapefruit-Tarragon Sauce
Tart grapefruit segments add a beautiful contrast to savory pan-fried chicken cutlets.
Break it Down
Cut the skin and white pith from the grapefruits.
Working over a medium bowl, cut between the membranes, releasing the grapefruit segments.
Cook chicken until it's cooked through and the coating is golden and puffed, about 3 minutes per side.
Pour the chicken stock into the skillet; cook, stirring, 2 minutes. Add the wine and cook, stirring up any browned bits, 1 minute.
