Honestly, you can't go wrong with classic stuffed shells—and this is the best recipe you'll find. Fresh ricotta and Pecorino Romano are a brilliant pair, especially when topped with a garlic-lemon-parsley gremolata. 

Friday: Grilled Brie-Stuffed Burgers with Bacon


These sammies may sound complicated, but you'll brie chowing down in no time. Take lean ground beef and enclose a piece of cheese in the center before shaping the patty, then season and prepare as usual for an easy, cheesy TGIF.

Shopping List

For the chicken tikka baked potatoes:

  • Four 6- to 8-oz. potatoes
  • Olive oil
  • 2 tbsp. butter
  • 2 tsp. grated fresh ginger
  • 2 cloves garlic
  • 1 1/2 tsp. garam masala
  • 2 cups canned or jarred tomato puree
  • 3 tbsp. chicken stock
  • 1/3 cup heavy cream
  • 2 cups cubed cooked chicken
  • Fresh cilantro leaves

For the stuffed tomatoes with serrano & manchego:

  • 6 tomatoes on the vine
  • Salt and pepper
  • 6 slices Serrano ham
  • 2 slices stale white peasant-style bread
  • 3 tbsp. olive oil
  • 1 small onion
  • 4 cloves garlic
  • 1 tbsp. fresh thyme
  • 4 oz. Manchego cheese
  • A small handful (about 1/4 cup) of fresh flat-leaf parsley

For the goat cheese & prosciutto-stuffed chicken breasts with roasted grapes:

  • 4 oz. fresh goat cheese
  • 4 thin slices prosciutto
  • 2 cloves garlic
  • 1 tsp. herbes de Provence
  • 4 boneless, skin-on chicken breasts (8 oz. each)
  • 2 tbsp. olive oil
  • 1 1/4 lb. grapes, separated into small clusters

For the spinach-stuffed shells with gremolata:

  • 1 container (16 oz.) fresh ricotta
  • 1 package (9 oz.) frozen spinach
  • 1/2 cup (2 oz.) grated Pecorino Romano
  • 1 egg
  • 1 jar (32 oz.) marinara sauce
  • 24 jumbo pasta shells
  • 1/3 cup finely chopped fresh flat-leaf parsley
  • 1 clove garlic
  • 1 1/2 tsp. lemon zest

For the grilled brie-stuffed burgers with bacon:

  • 8 slices bacon
  • 1 lb. lean ground beef
  • 6 oz. brie
  • EVOO
  • Salt and pepper
  • 4 hamburger buns
