The ingredient list for these Greek-style tartlets looks a little long, but don't fret. Most of the ingredients are spices and sauces you likely have on hand. Mix up the meat, spoon it onto store-bought puff pastry, and you've got yourself a simple snacky dinner. 

Friday: Rotisserie Chicken Carbonara

Use up the rest of Wednesday's rotisserie chicken in this cozy bowl of carbonara. Peas add freshness, bacon adds flavor, and the whole thing is ready in minutes.

Ingredient List

For the potato & prosciutto flatbread:

  • 1 tbsp. olive oil
  • 1 lb. pizza dough
  • 1 tbsp. Dijon mustard
  • 1 Yukon Gold potato
  • 1 1/2 cups grated Gruyère
  • 4 scallions
  • 4 oz. prosciutto

For the cheese tortellini with spinach:

  • 1 cup heavy cream
  • 2 cloves garlic
  • 1/2 tsp. ground nutmeg
  • 10 oz. baby spinach
  • 20 oz. cheese tortellini
  • 3/4 cup grated pecorino

For the rotisserie chicken flautas:

  • Rotisserie chicken
  • Corn or flour tortillas
  • Sour cream
  • Salsa
  • Cilantro

For the lamb tartlets with ricotta & mint:

  • 1 sheet frozen puff pastry (from one 14-oz. package or half of 17.3-oz. package)
  • 1 1/2 lb. ground lamb
  • 2 carrots
  • 1/2 cup chopped scallions
  • 3 cloves garlic
  • 2 tbsp. olive oil
  • 1 tsp. ground allspice
  • 1/2 tsp. cayenne
  • 1 can (14.5 oz.) diced tomatoes
  • 1 tsp. red wine vinegar
  • 1/2 cup whole-milk ricotta
  • torn fresh mint

For the rotisserie chicken carbonara:

  • 1 lb. spaghetti
  • 4 eggs
  • Parmesan
  • Bacon
