Ingredient List

For the potato & prosciutto flatbread:

  • 1 tbsp. olive oil
  • 1 lb. pizza dough
  • 1 tbsp. Dijon mustard
  • 1 Yukon Gold potato
  • 1 1/2 cups grated Gruyère
  • 4 scallions
  • 4 oz. prosciutto

For the cheese tortellini with spinach:

  • 1 cup heavy cream
  • 2 cloves garlic
  • 1/2 tsp. ground nutmeg
  • 10 oz. baby spinach
  • 20 oz. cheese tortellini
  • 3/4 cup grated pecorino

For the rotisserie chicken flautas:

  • Rotisserie chicken
  • Corn or flour tortillas
  • Sour cream
  • Salsa
  • Cilantro

For the lamb tartlets with ricotta & mint:

  • 1 sheet frozen puff pastry (from one 14-oz. package or half of 17.3-oz. package)
  • 1 1/2 lb. ground lamb
  • 2 carrots
  • 1/2 cup chopped scallions
  • 3 cloves garlic
  • 2 tbsp. olive oil
  • 1 tsp. ground allspice
  • 1/2 tsp. cayenne
  • 1 can (14.5 oz.) diced tomatoes
  • 1 tsp. red wine vinegar
  • 1/2 cup whole-milk ricotta
  • torn fresh mint
