For the smothered cabbage with sausage:

  • 3 to 4 tbsp. vegetable or olive oil
  • 8 oz. smoked sausage (such as andouille) or 8 oz. baked ham
  • 2 medium onions
  • 1/2 to 3/4 cup amber beer
  • 1 can (28 oz.) whole tomatoes in purée
  • 1/2 cup pitted green olives
  • 1 tsp. dried basil
  • 1 head (about 2 1/2 lb.) green cabbage
  • Hot sauce

For the baked Irish breakfasts:

  • 1 stick butter
  • Sea salt
  • 1/4 cup canola oil
  • 4 country-style pork sausage links (about 10 oz. total)
  • 8 oz. bacon
  • 2 onions
  • 4 oz. fresh spinach
  • 8 eggs
  • 8 cherry tomatoes
  • Flat-leaf parsley leaves

For the pistachio-citrus pesto with green beans & gemelli:

  • 1/3- 1/2 cup shelled pistachios
  • 1 cup (packed) basil
  • 1 cup (packed) flat-leaf parsley
  • 1/2 cup (packed) mint
  • 1 small red chile, such as finger or Holland chile
  • 2 small or 1 large clove garlic
  • 1 lemon
  • About 2 tsp. lemon zest
  • About 2 tsp. orange zest
  • Salt and pepper
  • About 1/3 - 1/2 EVOO
  • 1/4 cup (a fat handful) grated pecorino cheese
  • 1/2 pound green beans
  • 1 pound gemelli pasta

For the Irish beef stew:

  • 1 1/2 pounds hanger steak
  • 1 onion
  • 2 tablespoons olive oil
  • 1 bottle (11.2 oz.) Guinness stout
  • 1 1/4 cups tomato sauce
  • 2 teaspoons chopped rosemary
  • 1 cup frozen peas
  • Crusty bread

For the beer-marinated steak fajitas:

  • 1 pound beef skirt steak
  • 1 12-ounce can light beer
  • 2 teaspoons garlic powder
  • Salt and pepper
  • 3 red, green or orange bell peppers
  • 1 large onion
  • 3 tablespoons vegetable oil
  • 8 flour tortillas (6-inch)
  • 1 cup jarred salsa
