For the smothered cabbage with sausage:
- 3 to 4 tbsp. vegetable or olive oil
- 8 oz. smoked sausage (such as andouille) or 8 oz. baked ham
- 2 medium onions
- 1/2 to 3/4 cup amber beer
- 1 can (28 oz.) whole tomatoes in purée
- 1/2 cup pitted green olives
- 1 tsp. dried basil
- 1 head (about 2 1/2 lb.) green cabbage
- Hot sauce
For the baked Irish breakfasts:
- 1 stick butter
- Sea salt
- 1/4 cup canola oil
- 4 country-style pork sausage links (about 10 oz. total)
- 8 oz. bacon
- 2 onions
- 4 oz. fresh spinach
- 8 eggs
- 8 cherry tomatoes
- Flat-leaf parsley leaves
For the pistachio-citrus pesto with green beans & gemelli:
- 1/3- 1/2 cup shelled pistachios
- 1 cup (packed) basil
- 1 cup (packed) flat-leaf parsley
- 1/2 cup (packed) mint
- 1 small red chile, such as finger or Holland chile
- 2 small or 1 large clove garlic
- 1 lemon
- About 2 tsp. lemon zest
- About 2 tsp. orange zest
- Salt and pepper
- About 1/3 - 1/2 EVOO
- 1/4 cup (a fat handful) grated pecorino cheese
- 1/2 pound green beans
