Are veggies allowed to taste this good?

Preheat oven to 425°. Heat a medium skillet over medium-high. Add the bacon and cook, stirring occasionally, until crispy, 6 to 8 minutes. Remove bacon with a slotted spoon to a paper towel–lined plate. Reserve bacon fat.
In a large bowl, carefully toss Brussels sprouts with the bacon fat, oil, and a few large pinches of salt and pepper. Distribute between two baking sheets in a single layer. Roast, rotating baking sheets halfway through, until sprouts and are tender and crispy, 20 to 25 minutes.
Meanwhile, place butter in a small microwave-safe bowl; microwave until just melted, about 30 seconds. Whisk in the grainy mustard, maple syrup, Dijon, and a pinch of salt until blended.
Arrange sprouts on a serving platter. Drizzle with maple-mustard sauce and sprinkle bacon on top.
