Technically pink isn't part of the ROY-G-BIV color scheme, but it's not that far off from violet, and it's too tasty not to include! Once you whip up that flavor-packed creme, you'll want to top everything with a fresh dollop.

Shopping List

For the cherry tomato chicken:

  • 6 6 oz. boneless, skinless chicken breasst
  • 3 tbsp. EVOO
  • 1 cup dry white wine
  • 12 ounces cherry tomatoes
  • 6 garlic cloves
  • 2 tbsp. butter

For Rach's quick pumpkin mac & cheese:

  • Salt
  • 1 lb. macaroni, medium pasta shells, or elbow pasta
  • 4 tbsp. butter
  • 4 tbsp. flour
  • 2 cups whole milk
  • 1 can (14.5 oz.) pure pumpkin
  • 1 tsp. granulated garlic
  • 1 tsp. dry mustard
  • 1/4 tsp. cayenne
  • White pepper and a little freshly grated nutmeg to taste
  • About 3 cups freshly grated yellow cheddar
  • 2 oz. freshly grated Parmigiano-Reggiano
  • Finely chopped chives

For the Sunny Gazpacho:

  • 2 pounds yellow tomatoes
  • 2 slices white bread
  • 1 yellow bell pepper
  • 2 shallots
  • 1 jalapeno
  • 3 garlic cloves
  • 1 1/2 tsp. lemon zest
  • 1/2 cup lemon juice
  • 1/2 cup EVOO
  • Ice cubes
  • 3 ribs celery with leaves

For the Brussels sprouts grilled cheese with baby kale salad:

  • 4 tbsp. olive oil
  • 3/4 lb. Brussels sprouts
  • 1 shallot
  • 8 slices whole-grain bread
  • 1/2 cup grated Parmesan
  • 2 tbsp. plus 1/2 tsp. Dijon mustard
  • 2 cups grated fontina
  • 1 tbsp. apple cider vinegar
  • 4 cups baby kale
  • 1 apple
  • 1/2 cup toasted slivered almonds

For the petite filets with spicy pink creme fraiche & shoestring mushrooms:

  • 3/4 pound maitake (hen-of-the-woods) mushrooms
  • 3 large shallots
  • 3 tbsp. sherry
  • 2 tbsp. EVOO
  • Salt and coarsely ground black pepper
  • 2 tbsp. butter
  • 4 petite flilets or filets mignon
  • 1/2 cup creme fraiche
  • 1/4 cup chopped chives
  • 1 1/2 tbsp. prepared red horseradish
  • 1 1/2 tbsp. fresh lemon juice
  • 1 tsp. Worcestershire sauce
