Rach's Sunday Dinner: Eggplant Schnitzel with Cream of Mushroom Soup
This meal was written to be meat-free, though it certainly doesn’t have to be. Even if you love chicken, pork, veal, and beef, eggplant schnitzel is pretty magical—and surprisingly meaty—if you take the time to salt the eggplant. And the soup alone is meal enough for me! You may want to double the recipe and put half in the freezer for a cold day when you don’t feel like dealing with dinner. Reheat it, then relax by the fire with a movie and a bowl of hot soup.
