My mom used to spread mayo on cod and top it with giant breadcrumbs and cheese or crushed chips. I've used salt-and-vinegar chips for extra flavor.

You can serve this chicken salad on a bed of Bibb lettuce with corn chips, or make lettuce tacos with hearts of romaine. It's also great in charred corn or flour tortillas and topped with red cabbage. S'all good!
