For the heirloom tomato frittata pizza:

  • 10 large eggs
  • 1/2 lb. fresh ricotta
  • About 1 cup grated Parmigiano-Reggiano
  • Salt and pepper
  • 3 tbsp. olive oil
  • 2 large cloves garlic
  • 6 to 8 thin slices of heirloom tomatoes
  • 6 to 8 thin slices of mozzarella (from a 1-lb. ball)
  • A sprinkle of crushed red pepper
  • A small handful of fresh basil leaves 

For the supreme pizza penne:

  • 8 oz. sweet Italian sausage
  • 1 red onion
  • 1 green bell pepper
  • 2 cloves garlic
  • 1 can (15 oz.) pizza sauce
  • 1/2 cup chopped pepperoni
  • 12 oz. penne
  • 1 1/2 cups (6 oz.) shredded mozzarella
  • Sliced fresh basil

For the pepperoni pizza baked wings:

  • 4 lbs. chicken wings
  • 2 tbsp. canola oil
  • 1 tbsp. salt
  • 1 tsp. pepper
  • 3/4 cup tomato paste
  • 1/4 cup olive oil
  • 1 cup grated mozzarella
  • 3/4 cup diced pepperoni
  • Sliced fresh basil

For the chicken paillard white "pizzette" with spinach & arugula salad: 

  • 4 boneless, skinless chicken breasts (6 to 8 oz. each)
  • Salt and pepper
  • 2 tbsp. olive oil
  • About 1 1/2 cups fresh ricotta
  • 1/4 cup (a small handful) fresh flat-leaf parsley
  • 1/4 cup (a small handful) grated Parmigiano-Reggiano
  • 1 large clove garlic
  • EVOO
  • 3 ⁄4 lb. fresh mozzarella
  • 4 cups baby spinach
  • 2 cups arugula
  • 1 small lemon

For the pizza onion burgers:

  • 2 tbsp. olive oil
  • 2 large onions
  • Salt
  • 1 tsp. dried oregano
  • About 1/4 cup tomato paste
  • 1 tsp. Calabrian chili paste or 1 tsp. crushed red pepper
  • 1/2 cup red wine
  • 1 cup chicken stock or water
  • 1 1/2 lb. ground sirloin
  • Kosher salt and black pepper
  • 1/2 cup fresh flat-leaf parsley
  • 6 tbsp. butter, at room temperature
  • 3 cloves garlic
  • Drizzle of olive oil
  • 4 slices each provolone and mozzarella (from the deli counter)
  • 4 Italian rolls or 4- to 5-inch pieces of soft Italian bread
  • Little Gem lettuce leaves, sliced tomato, and basil leaves
