For the philly steaks:

  • Olive oil
  • 1 large or 2 medium onions
  • Salt
  • Sugar
  • Chicken stock
  • Butter
  • Flour
  • White wine
  • Whole milk
  • Black and white pepper
  • Worcestershire sauce
  • Granulated garlic
  • High-heat cooking oil (such as canola or grapeseed)
  • 1 lb. boneless rib eye steak
  • Shredded sharp provolone
  • 4 sub or hoagie rolls (each 10 to 12 inches long)
  • Fresh flat-leaf parsley

For the moroccan chicken: 

  • Olive oil
  • 6 bone-in, skin-on chicken thighs (about 2 1/2 lb.)
  • 1 very large onion
  • 4 cloves garlic
  • Ground coriander
  • Ground cumin
  • Paprika
  • Turmeric
  • 4 medium carrots
  • Chicken stock
  • Pitted green olives
  • Fresh flat-leaf parsley
  • 2 lemons
  • Whole-wheat couscous

For the white fish:

  • 1 package (8 oz.) yellow rice (such as Goya)
  • 4 scallions
  • 3 oz. tomatillos
  • 1/2 green apple
  • 4 radishes
  • Olive oil
  • 1 lime
  • Fresh cilantro
  • Ground coriander
  • 4 cod fillets (6 oz. each)

For the stuffed peppers: 

  • EVOO
  • 4 large red bell peppers
  • 1 small onion
  • 1 zucchini
  • 3 cloves garlic
  • 1 pound ground lamb
  • Dried oregano
  • Marinara sauce
  • Pearl couscous
  • Crumbled feta

For the stroganoff: 

  • Beef or chicken stock
  • Dried porcini mushrooms
  • Olive oil
  • Butter
  • White mushrooms
