Pop, clink, fizz! Pick up some Earl Grey syrup (or, make your own!) and raise a fizzy cheers to the New Year.

Fill a 4-ounce coupe glass with ice and water while preparing the cocktail.
Place the gin, Earl Grey syrup, lemon juice, and bitters in a cocktail shaker. Fill halfway with ice, cover, and shake until chilled, about 30 seconds. Discard ice and water from coupe, then strain cocktail into the chilled glass. Top with sparkling wine. Garnish with a lemon twist.
Combine ½ cup of water and the sugar in a small pot over medium-high heat; bring to a simmer. Cook, stirring, until the sugar dissolves, about 4 minutes. Remove pot from heat and add the teabags. Steep for 10 minutes. Remove the tea bags without squeezing them. Let the syrup cool completely before using. Store in a small jar with a tight-fitting lid in the refrigerator for up to 1 week.
