  • Preheat oven to 400°. Rub squash all over with the oil; season with salt. Place on a baking sheet, cut-sides down, and roast on middle rack for 45 minutes or until flesh is pierced easily with a knife. When cool enough to handle, scoop out flesh with a spoon and transfer to a food processor. Process until smooth, 1 to 2 minutes.

  • In a small bowl, combine the butter, honey, cinnamon, and 1/4 tsp. salt with a small spatula until well combined. Set aside.

  • Spoon squash puree into a medium pot over medium-low heat. Cover and heat until warmed through. Stir in chipotle powder and season with salt. Transfer squash to a serving bowl. Dollop seasoned butter on top.
