Turn leftover risotto into arancini (fried rice balls). Roll chilled risotto into balls. Roll the risotto balls in flour, then in beaten eggs, and finally in breadcrumbs. Fry until golden.

Meatball Madness!

Meatballs are great for holiday parties. Put out a spread of them with wine and everyone will be happy. Want 'em for dinner? Pair them with bread, rice, buttered gnocchi, or mashed potatoes and a simple salad.
