Soup in summer is totally a thing, especially when it's packed with in-season ingredients like corn, shrimp, leeks, bell pepper, and tons of fresh basil and mint. Serve this chowder alongside an herb-packed salad for extra green goodness.

Go Greek—and heavy on the mint—with this flavor-packed bowl of carbs. Kale and mint get pureed into a quick pesto that pairs perfectly with the lamb and feta. 

Wednesday: Big Sky Rib-Eye with Shallot-Herb Butter

How to make a rib-eye even better? Slather it with butter full of parsley, tarragon, and thyme and let it get all melty. It's meaty, herby perfection. 

Thursday: Herby Lamb Burgers with Shaved Asparagus & Tahini-Yogurt Sauce

When it comes to burgers, we say go big or go home. These patties go extra-big on flavor thanks to a fresh herb combo of dill, mint, parsley, and cilantro. Top them with tons of veggies (including shaved asparagus) and a garlicky sauce, and you've got yourself one delicious burger. If you've got any leftover asparagus, make this minty grilled asparagus and serve on the side!

Breakfast for dinner just feels right on Fridays, and this creamy egg dish doesn't disappoint. It's got parsley, cilantro, and chives in the mix, but if you want even more herbs, serve it alongside Rach's cheesy mint and parsley garlic bread for a simple and oh-so satisfying meal. 


For the chowder: 

  • 5 ears of corn
  • 3 tbsp. butter
  • 1 large leek or 2 medium leeks
  • 1 red bell pepper
  • 2 red or green chiles (such as jalapeño or Fresno)
  • 1 1/2-inch piece of fresh ginger
  • 4 large cloves garlic
  • 3 tbsp. red curry paste
  • 1 quart chicken stock or vegetable stock
  • 1 can (14 oz.) unsweetened coconut milk
  • 1 tbsp. fish sauce
  • 1 lb. medium to large shrimp
  • 2 limes—1 juiced (about 2 tbsp.)
  • 1 cup fresh Thai basil or regular basil
  • 1/4 cup fresh mint leaves or cilantro leaves

For the pasta: 

  • 1 lb. lumache or other medium-size shell pasta
  • 3 cups chopped stemmed kale
  • 2 cups (packed) fresh mint leaves
  • 3/4 cup olive oil
  • 1 clove garlic
  • 1 lb. ground lamb
  • 1/4 cup crumbled feta

For the rib-eye: 

  • 1 stick butter
  • 1/4 cup finely chopped shallots
  • 2 tbsp. finely chopped fresh flat-leaf parsley leaves
  • 2 tbsp. finely chopped fresh tarragon leaves
  • 2 tbsp. finely chopped fresh thyme leaves
  • 4 bone-in rib eye steaks (each 1 1/2 inches thick)
  • Kosher salt

For the burgers: 

  • 1/2 small red or white onion
  • 1/2 bunch medium asparagus
  • 1 lemon
  • Salt and pepper
  • 2 lb. ground lamb
  • Salt and pepper
  • 3 tbsp. grated onion (half a small onion) or 1 grated shallot
  • 2 cloves garlic
  • 1 cup (combined) loosely packed fresh mint, dill, parsley, and cilantro leaves, 
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1 tsp. crushed red pepper
  • 1 tsp. lemon zest
  • About 1 tbsp. EVOO
  • 1/2 cup plain yogurt
  • 2 tbsp. tahini
  • 1/2 lemon
  • 1 tbsp. EVOO
  • 1 small clove garlic
  • 1/2 tsp. ground cumin
  • Salt
  • 1/2 cup finely chopped Israeli pickles or other pickles
  • 1/2 cup finely chopped seeded Roma tomatoes
  • 1/2 cup chopped pickled jalapeños or giardiniera
  • 4 brioche buns

For the baked eggs: 

  • 2 cups heavy cream
  • 3 tbsp. each finely chopped fresh flat-leaf parsley, cilantro, and chives
  • 6 eggs
  • 2 tbsp. thinly sliced scallions
  • 6 slices of rustic bread
