For the eggplant parmesan boats:
- 4 eggplants (10 oz. each)
- 2 tbsp. olive oil
- 1/4 cup panko breadcrumbs
- 1/4 cup grated Parmesan
- 1 cup marinara sauce from jar
- 1/2 cup shredded mozzarella
- Chopped fresh basil
For the cheesy chicken bake:
- 1 1/2 pounds tomatoes
- 1 small onion
- 1/2 cup chopped parsley
- 3 cloves garlic
- 2 tablespoons EVOO
- 4 6 ounces boneless, skinless chicken breasts
- 1 cup grated fontina
For the cheesy ziti with broccoli rabe:
- 1 lb. ziti
- 1 lb. broccoli rabe
- 2 cups ricotta
- 3/4 tsp. crushed red pepper
- 1 cup grated Parmesan
For the Philly steak with onions & provolone gravy:
- 2 tbsp. olive oil
- 1 large or 2 medium onions
- Salt
- A sprinkle of sugar
- 1 1/2 cups chicken stock
- 1 tbsp. plus 1 1/2 tsp. butter
- 1 tbsp. plus 1 1/2 tsp. flour
- 2 tbsp. white wine
- 1/2 cup whole milk
- Black and white pepper
- About 1 1/2 tsp. Worcestershire sauce
- 1/2 tsp. granulated garlic
- High-heat cooking oil (such as canola or grapeseed)
- 1 lb. boneless rib eye steak
- 1 cup shredded sharp provolone
- 4 sub or hoagie rolls (each 10 to 12 inches long)
