Ingredients

Cake
Basil Sugar

Directions

Cake
  • Preheat oven to 350°. Grease and flour a standard-size loaf pan. In a large bowl, whisk granulated sugar, oil, buttermilk, eggs, and vanilla. In a medium bowl, whisk flour, baking powder, and salt. Add dry ingredients to wet, whisking gently until just combined. Pour into pan. Arrange strawberries on top in two lines, overlapping slightly. Bake until golden brown and a cake tester inserted into the center comes out clean, 1 hour and 15 minutes. Let cool 5 minutes, then remove cake from pan and transfer to a wire rack. Sprinkle with some of the basil sugar.

Basil Sugar
  • In a food processor, combine 2/3 cup each granulated sugar and packed fresh basil leaves. Process until deep green, about 15 seconds, then transfer to an airtight container for up to 2 days.

Tips

Fold in fresh blueberries as a stand-in for the strawberries.

This recipe makes more than you'll need for the Olive Oil Loaf Cake with Strawberries, but there are plenty of ideas for the leftovers: Use it to sweeten fruit salad, garnish corn bread, and rim cocktail glasses.
