For the slow-cooker paella:

  • 2 tablespoons EVOO
  • 2 pounds boneless, skinless chicken thighs
  • 3 teaspoons sweet smoked paprika
  • 2 cups short-or medium-grain rice, such as Arborio
  • 1 14 1/2 ounce can whole tomatoes
  • 1 cup low-sodium chicken broth
  • 1/2 cup dry white wine
  • 1 8 ounce package cured chorizo
  • 1 onion
  • 3 cloves garlic
  • A pinch saffron (optional)
  • 1 tablespoon salt
  • 2 cups thawed frozen peas
  • 1/2 cup chopped flat-leaf parsley
  • 1 lemon

For the cola pulled pork sandwiches:

  • 6 pounds boneless pork shoulder
  • 1 tablespoon ancho chile powder
  • 1 cup cola
  • Potato buns 
  • Pickle chips and barbecue sauce, for serving

For the sausage, bean & spinach stew:

  • 1 pound dried large white beans, such as great northern
  • 8 cups low-sodium chicken broth
  • 1 onion
  • 2 carrots
  • 2 ribs celery
  • 6 cloves garlic
  • 8 sprigs fresh thyme
  • 1 bay leaf
  • Parmesan rind (optional)
  • 1 pound sweet or spicy Italian sausage
  • 1 bunch spinach
  • Juice of 1/2 lemon
  • Crusty bread, for serving

For the sweet chile hot wings:

  • 1 cup soy sauce
  • 1 cup honey
  • 1/4- 1/3 cup sriracha
  • 4 pounds chicken wingettes and/or drumettes
  • 3 tablespoons roughly chopped cilantro

For the low & slow chipotle-maple beef:

  • 3 chiles plus 3 tbsp. sauce from 1 can chipotle chiles in adobo sauce
  • 1 cup pineapple juice
  • 1/2 cup pure maple syrup
  • 3 tablespoons tomato paste
  • 2 teaspoons salt
  • 1 teaspoon pepper
