Head down south to wrap up a week of tasty American meals! This N'awlins staple will bring ALL the flavor thanks to added green chiles, garlic, cilantro, and Cajun seasoning. 

Shopping List

For the grilled chicken & corn salad with chipotle crema:

  • 1 cup heavy cream or Mexican crema
  • 2 tbsp. chipotle chiles in adobo sauce
  • 1 lb. boneless, skinless chicken (breast or thigh)
  • 2 large ears corn
  • 1/4 cup olive oil
  • Salt and pepper
  • 1 tbsp. chopped fresh thyme
  • 1 tsp. dried Mexican oregano
  • 1 tsp. ground cumin
  • Juice of 2 limes
  • 2 tsp. acacia honey or light agave
  • 6 cups chopped romaine hearts
  • 4 ounces Manchego cheese
  • 1 ripe Hass avocado

For the tuna poke tacos with fried avocado:

  • 3 scallions
  • 3 tbsp. soy sauce
  • 2 limes
  • 1 1/4 tsp. toasted sesame oil
  • 1 tsp. chile-garlic sauce or sriracha
  • 1 lb. sushi-grade tuna
  • 1 qt. vegetable oil
  • 1 cup flour
  • 3 eggs
  • 2 cups panko breadcrumbs
  • 2 firm but ripe avocados
  • 8 large hard corn taco shells
  • 4 radishes

For the lightened-up lobster rolls:

  • 2 cups cooked lobster meat
  • 1/4 cup canola mayonnaise
  • 1 rib celery
  • 1 tbsp. finely chopped red onion
  • 1 tsp. lemon zest
  • 4 top-split New England-style rolls or regular hot dog rolls
  • 2 tbsp. unsalted butter
  • Lemon wedges

For the club burger sliders with avocado-ranch dressing:

  • Extra-virgin olive oil (EVOO) or vegetable oil
  • 6 slices center-cut bacon
  • 2 lbs. ground turkey or ground turkey breast
  • 1 small onion
  • 1 tbsp. hot sauce
  • 2 tbsp. poultry seasoning
  • Salt and pepper
  • 1 hass avocado
  • 1 cup sour cream
  • Juice of 1 lemon
  • 1 clove garlic
  • A small handful of fresh chives
  • A smal handful of fresh dill
  • A small handful of flat-leaf parsley
  • 16 slices good-quality white or whole wheat bread
  • Bibb or butter lettuce leaves
  • 2 plum or vine-ripened tomatoes

For the Cajun Catfish with Corn Sauté:

  • 4 catfish fillets (about 6 oz. each)
  • 2 tbsp. olive oil
  • 1 tbsp. Cajun seasoning
  • 3 cloves garlic
  • 1 bag (about 14 oz.) frozen corn
  • 1 can (10 oz.) diced tomatoes with green chiles
  • 2 tbsp. sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 lemon
