Break it Down
In a large bowl, combine the pork, wine, EVOO, fennel seeds, garlic, onion, sage, 1 tsp. salt and 1 tsp. pepper. Form into 8 small, thin patties.
Step 2
Add the patties to the griddle and cook until browned and cooked through, 3 to 4 minutes per side.
Step 3
In a medium bowl, whisk the eggs, milk, remaining 1/2 tsp. salt, remaining 1 tsp. pepper, the cheese and nutmeg. Coat the bread in the egg mixture.
Step 4
Cook the French toast, turning once, until golden and cooked through, 5 minutes.

"A 'Rachel' sandwich (no relation!) is a Reuben made with turkey or pastrami instead of corned beef. Here, I've used the same flavors to make a hash," Rachael says.

In a medium bowl, mix the sour cream, ketchup and relish.
Step 2
In a heavy skillet, heat 1 tbsp. oil over medium-high. Melt the butter in the oil, then add the potatoes and cook until browned, 8 to 10 minutes.
Step 3
Add the onion; stir 2 to 3 minutes. Add the turkey and cook until lightly browned at the edges, 2 to 3 minutes more.
Step 4
Stir in the sauerkraut; cook to heat through. Sprinkle with the Gruyere, then tent with foil to melt the cheese.
Step 5
In a large nonstick skillet, heat a little oil over medium. Add the eggs (1 or 2 per serving) and cook, flipping once, to desired doneness, 3 to 7 minutes.
Step 6
Divide the hash among plates. Drizzle with the Russian dressing; top with the eggs.

This savory spread is a brunch fave. Serve it with toast points, or slather it on toast, then top with steamed asparagus and sliced Gruyere or sliced tomato and cheddar. Bake in a 375 degree oven until the cheese is golden and top with an over-easy egg.

Arrange the bacon on a broiler pan; bake until crisp, 12 to 14 minutes. Let cool, then chop.

In a medium bowl, mix the bacon, Neufchatel, nuts, scallions and nutmeg.

In a heavy skillet over medium-high, heat 1 tbsp. EVOO, one turn of the pan. Add the chicken; cook until browned and cooked through, about 3 minutes per side.

In a medium bowl, whisk the lemon juice, vinegar, mustard, honey and the remaining 3 tbsp. EVOO.

You may have had a Monte Cristo with ham and cheese, but wait until you try it with apples and mushrooms, too!

Break it Down
Cook the mushrooms until brown, 4 minutes. Add the thyme; season with salt and pepper.
Step 2
Meanwhile, cook the apples until tender, 5 minutes; season with the nutmeg.
Step 3
Add the Calvados; then, using a long kitchen match or a barbecue lighter, ignite the alcohol.
Step 4
In a small bowl, mix the créme fraiche and mustard.
Step 5
In the skillets, melt the remaining 2 tbsp. butter over medium and cook the sandwiches until golden, adding more butter as needed, about 2 minutes per side.
Step 6
Cut in half and divide among plates.
