Zucchini Pickles


  • 1/2 cup thinly sliced zucchini
  • 1 teaspoon plus a pinch of salt
  • 1/2 cup water
  • 1/3 cup vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon mustard seeds
  • 1 dill sprig
  • 1 smashed clove garlic


In a medium bowl, mix zucchini and a pinch of salt. In a small saucepan, bring water, vinegar, sugar, 1 tsp. salt, mustard seeds, dill sprig and garlic to a boil. Strain brine over zucchini; let cool.
