- 1 cup peeled, chopped fresh ginger
- 1 tablespoon honey
- 32 ounces seltzer
- 2 tablespoons fresh lime juice
- 4 lime wedges
In a pan, bring the ginger, honey and 2 cups water to a boil over high. Lower the heat to medium; simmer until reduced to 3/4 cup, about 10 minutes. Let cool.
Strain the ginger mixture into a pitcher. Add the seltzer and lime juice. Pour over ice and garnish with lime wedges.
