Zesty Cauliflower "Rice"
Ingredients
- 1 small head cauliflower, chopped
- 1 shallot, minced
- 1 tablespoon olive oil
- 3 tablespoons toasted pine nuts
- 3 tablespoons chopped parsley
- 1 tablespoon orange zest
- 1/2 cup raisins
Preparation
In food processor, pulse cauliflower into pea-size pieces. In skillet, cook shallot in oil over medium-high, 3 minutes. Add cauliflower; cook, stirring often, until warm, 4 minutes. Stir in remaining ingredients; season.
