za’atar chicken with carrot salad

Ingredients

  • 1 lb. carrots, grated
  • 1/4 cup fresh orange juice
  • 2 tbsp. fresh lemon juice
  • 1 tbsp. sliced fresh mint
  • 6 tbsp. olive oil
  • 1  1/2 cups panko
  • 2 tbsp. za’atar seasoning
  • 2 boneless, skinless chicken breasts, halved horizontally
  • 1 egg, beaten

Preparation

In bowl, toss first 4 ingredients with 2 tbsp. oil; season. In another bowl, mix panko and za’atar. Coat chicken in egg, then panko. In skillet, fry in remaining oil over medium-high, 5 minutes per side.
