Winter Curried Chicken Salad Sandwiches

These hearty sandwiches are filled with dried fruit, winter squash, and rotisserie chicken. Find a cozy place for lunch, because it's about to be comfort food to the max.

Servings: 4 Sandwiches


  • 1 1/2 cups (about 12 oz.) small cubes of butternut squash

  • 2 tsp. olive oil

  • 1/3 cup mayonnaise

  • 1 shallot, finely chopped

  • 1 tbsp. maple syrup

  • 2 tsp. curry powder

  • 2 cups chopped rotisserie chicken

  • 1/2 cup chopped mixed dried fruit (such as cranberries and raisins)

  • 1 small head radicchio, chopped

  • 8 slices pumpernickel bread, toasted


On baking sheet, toss squash and oil; season. Roast at 400° until tender, 15 to 20 minutes. In bowl, whisk mayo, shallot, syrup, and curry powder. Stir in chicken, fruit, and squash; season. Build sandwiches with chicken salad, radicchio, and toast.
