Whipped Tarragon Potatoes

- 1 pound yellow-fleshed potatoes
- Tarragon sprig
- 1 1/2 tablespoons butter
- 2 tablespoons milk
- 2 teaspoons chopped tarragon
- Salt and pepper
Preparation
Simmer 1 pound yellow-fleshed potatoes in salted water with a tarragon sprig until very tender; drain, discarding the tarragon. Whip the potatoes with 1 1/2 tablespoons butter, 2 tablespoons milk and 2 teaspoons chopped tarragon; season with salt and pepper.
