Watermelon Pops

After a warm day outside, these watermelon pops with lime juice and honey are sure to hit the spot.

Watermelon Pops Recipe

Start to Finish: 20 minutes (plus 8 hours for chilling and freezing)

Servings: Makes 6 to 8 pops


  • 1 1/2 cups watermelon juice

  • 1/4 cup sugar

  • 2 tbsp. fresh lime juice (from about 1 lime)

  • 1 1/2 tbsp. honey

  • 1/2 tsp. rose water

  • 1/8 tsp. kosher salt


In a small saucepan, bring all the ingredients to a simmer over medium heat, stirring just until the sugar dissolves. Remove from heat and let cool to room temperature. Pour into ice pop molds, leaving about 1/3 inch of room at the top. Freeze until firm, about 8 hours.
