Watermelon Pops
After a warm day outside, these watermelon pops with lime juice and honey are sure to hit the spot.

Start to Finish: 20 minutes (plus 8 hours for chilling and freezing) | Servings: Makes 6 to 8 pops |
Ingredients
1 1/2 cups watermelon juice
1/4 cup sugar
2 tbsp. fresh lime juice (from about 1 lime)
1 1/2 tbsp. honey
1/2 tsp. rose water
1/8 tsp. kosher salt
Preparation
In a small saucepan, bring all the ingredients to a simmer over medium heat, stirring just until the sugar dissolves. Remove from heat and let cool to room temperature. Pour into ice pop molds, leaving about 1/3 inch of room at the top. Freeze until firm, about 8 hours.
