- 1/3 cup sliced fresh mint
- 1/4 cup sugar
- 1 teaspoon thinly sliced habanero chile
- 1 pound seedless watermelon, chopped
- 3 tablespoons fresh lime juice
In small pan, boil mint, sugar and habanero with 1/2 cup water, stirring, until sugar dissolves; strain syrup. In blender, puree watermelon, lime juice and syrup; strain through fine-mesh strainer. Divide among ice pop molds; freeze until solid, about 4 hours.
