Waldorf Chopped Salad

Ingredients
- 3 tablespoons EVOO
- 2 teaspoons lemon zest
- 2 tablespoons lemon juice
- 2 teaspoons minced shallot
- 6 cups chopped romaine
- 3 ribs celery, thinly sliced, leaves reserved
- 2 Fuji apples-halved, cored and thinly sliced
- 1/4 cup chopped walnuts, toasted
Preparation
In bowl, whisk EVOO, lemon zest and juice, and shallot; season. Add remaining ingredients; season and toss.
