Ingredients

  • 3 tablespoons EVOO
  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice
  • 2 teaspoons minced shallot
  • 6 cups chopped romaine
  • 3 ribs celery, thinly sliced, leaves reserved
  • 2 Fuji apples-halved, cored and thinly sliced
  • 1/4 cup chopped walnuts, toasted

Preparation

In bowl, whisk EVOO, lemon zest and juice, and shallot; season. Add remaining ingredients; season and toss.
