Waffles with Rhubarb & Ginger Compote

Servings: Makes 12

Ingredients

  • 1 lb. rhubarb, cut into 1-inch pieces (about 3 cups)

  • 1/2 cup sugar

  • 2 tbsp. fresh orange juice

  • 1 tbsp. grated peeled fresh ginger

  • 1/4 tsp. Chinese five-spice powder

  • 12 frozen waffles, toasted

Preparation

In pot, combine all ingredients except waffles. Cook over medium-high, stirring often, until rhubarb softens, about 15 minutes. Spoon rhubarb compote on top of waffles.
