Veggie Flatbread Sandwiches

  • 6 ounces feta
  • 1/2 cup plain greek yogurt
  • 2 teaspoons grated lemon zest, plus 1 tbsp. juice
  • 4 naan breads or pitas, warmed
  • 1/2 english cucumber, thinly sliced
  • 6 radishes, thinly sliced
  • 1 large avocado, sliced
  • 1/2 small red onion, thinly sliced
  • 1 tomato, diced
  • 1/3 cup fresh mint leaves, coarsely torn


In food processor, blend feta, yogurt, zest and juice; season. Spread over naan. Arrange cucumber, radishes, avocado, onion, tomato and mint over wider half of each naan; season. Fold narrow end of naan over filling. Cut in half and secure with toothpick.
