Give leftover turkey a healthy twist!
On baking sheet, toss stuffing with 2 tbsp. oil. Bake at 375° until golden, about 8 minutes. Let cool. In mini food processor, mix Parmesan, yogurt, Dijon, anchovy, garlic, and 1 tbsp. oil until dressing is smooth; season. In large bowl, massage kale with remaining 3 tbsp. oil until tender. Toss with dressing. Top salad with turkey and stuffing croutons.
