Turkey Kale Caesar with Stuffing Croutons

Give leftover turkey a healthy twist!

  • 2 cups chopped leftover stuffing 
  • 6 tbsp. olive oil
  • 1/4 cup grated Parmesan 
  • 3 tbsp. plain Greek yogurt 
  • 2 tsp. Dijon mustard
  • 1 anchovy fillet 
  • 1 clove garlic 
  • 2 bunches (8 oz. each) kale, center stems cut out and leaves chopped 
  • 8 oz. leftover turkey, torn into bite-size pieces


On baking sheet, toss stuffing with 2 tbsp. oil. Bake at 375° until golden, about 8 minutes. Let cool. In mini food processor, mix Parmesan, yogurt, Dijon, anchovy, garlic, and 1 tbsp. oil until dressing is smooth; season. In large bowl, massage kale with remaining 3 tbsp. oil until tender. Toss with dressing. Top salad with turkey and stuffing croutons.
