Tropical Skillet Granola
For a coconutty flavor, choose unrefined coconut oil (also labeled Extra-Virgin or Virgin). Want a milder taste? Go for refined.

Ingredients
2 tbsp. coconut oil
2 tbsp. pure maple syrup
2 tbsp. (packed) brown sugar
1 1/2 tsp. ground allspice
1 1/2 cups old-fashioned oats
3/4 cup sweetened shredded coconut
1/2 cup roasted salted macadamia nuts
1 cup mixed dried tropical fruits (such as banana, pineapple, or mango)
Preparation
In large nonstick skillet, cook oil, syrup, sugar, and allspice over medium-high until sugar melts, 2 minutes. Add oats, coconut, and 1/4 tsp. salt. Cook, stirring, until toasted, 5 to 7 minutes. Stir in nuts. Transfer to baking sheet and let cool. Stir in fruit.
