Tomato Toast with Avocado Cream

Everyone loves the trifecta of bread + creamy spread + ripe tomatoes. Layer this tasty stuff for the ultimate open-face sandwich.

Ingredients

Avocado cream

  • 1 pitted, peeled large avocado
  • 3 tbsp. sour cream
  • 1 tbsp. fresh lime juice
  • Toast
  • Yellow tomatoes
  • Red onion
  • Mint
  • Red chilis

Preparation

1. Avocado cream: In a food processor, puree 1 pitted, peeled large avocado, 3 tbsp. sour cream and 1 tbsp. fresh lime juice; season. (Makes about 1 1/4 cups)

2. Spread avocado cream onto toast. Assemble tomatoes, onion, mint, and chilis on toast.
