Tomato & Peach Salad

What's more summery than tomatoes, peaches, and basil?

  • 1 cup fresh ricotta

  • 4 tbsp. EVOO

  • 3 large tomatoes, cut into bite-size pieces

  • 3 large peaches—halved, pitted, and sliced

  • cracked black pepper

  • torn fresh basil, for garnish

  • balsamic vinegar, for drizzling


In food processor, blend ricotta and 2 tbsp. oil; season. In bowl, toss tomatoes and peaches with remaining 2 tbsp. oil. Spread ricotta on plates; top with tomatoes and peaches. Top with black pepper and basil. Drizzle with vinegar.
