- 8 oz. ground turkey
- 1/2 cup breadcrumbs (whole wheat if available)
- 1/2 cup grated carrot
- 1/4 cup corn kernels
- 1 egg white, lightly beaten
- 1 tbsp. finely chopped fresh parsley
In a large bowl, mix ground turkey, breadcrumbs, carrot, corn kernels, egg white and parsley. Form into 12 patties. Heat a greased grill or 1 tbsp. olive oil in a skillet over medium. Cook patties until cooked through, turning once, 2 to 3 minutes per side. Freeze leftovers up to 2 weeks.
