Thyme & Poppy Seed Crackers

Makes 3/4 lb.   


  • 2 cups flour, plus more for rolling

  • 1 tbsp. poppy seeds

  • 1 tsp. sugar

  • 3 tbsp. olive oil, plus more for brushing

  • 2 tbsp. fresh thyme leaves

  • Flaky sea salt


In food processor, blend flour, poppy seeds, sugar, and 3/4 tsp. salt. Add 3 tbsp. oil and 1/2 cup plus 1 tbsp. water; pulse until dough forms. Divide in half. On floured surface, roll dough into 2 large, thin ovals. Transfer to parchment-lined baking sheets. Brush with olive oil. Sprinkle with thyme, sea salt, and pepper. Bake at 425° until browned at edges, about 12 minutes. Let cool; break into pieces.
