Thai Red Curry Noodles

Thai Red Curry Noodles

  • 1/4 cup canola oil
  • 1/4 cup Thai red curry paste
  • 1 tbsp. (packed) light brown sugar
  • 1 tbsp. grated peeled fresh ginger
  • 1 cup chopped green beans
  • 1 medium carrot, cut into matchsticks (1 cup)
  • 12 oz. bean thread noodles, cooked
  • Bean sprouts, chopped peanuts, and fresh cilantro, for garnish


In wok or large skillet, stir-fry first 4 ingredients over high heat until fragrant, 1 minute. Add green beans, carrot, and 1/2 cup water; cook for 2 minutes. Stir in noodles until warmed; season. Garnish.
