Thai Pork Chops

Ingredients
- 1 tablespoon EVOO
- 4 bone-in pork chops (3/4-inch thick)
- 1 onion, sliced
- 1 green bell pepper, sliced
- 14 ounces coconut milk
- 1/4 cup red curry paste
- 1 1/2 tablespoons grated ginger
- 1/2 cup cilantro
Preparation
In skillet, heat EVOO over high. Season pork; brown, 5 minutes per side. Transfer to plate. Bring next 5 ingredients to a boil; simmer 10 minutes. Return pork to pan; top with cilantro.
