Tahini-Peanut Noodles
Just add fresh veggies for an easy Thai dinner!
Ingredients
3/4 cup creamy peanut butter
1/4 cup canola oil
1/4 cup tahini
3 tbsp. rice wine vinegar
3 tbsp. soy sauce
1 clove garlic, grated
1 tsp. grated peeled fresh ginger
1 lb. linguine
Shredded cucumber and carrot, sliced scallions, cilantro, and peanuts, for garnish
Preparation
In large bowl, stir first 7 ingredients with 2 tbsp. hot water; add more water to thin sauce if needed. In pot of salted boiling water, cook pasta until al dente. Rinse pasta and drain well. In bowl, toss pasta with sauce. Garnish pasta.
