Sweet & Sour Broccoli Slaw with Edamame

  • 3 tbsp. rice vinegar
  • 2 tsp. sugar
  • 1/4 cup vegetable oil
  • 1 bag (12 oz.) broccoli slaw mix
  • 8 oz. frozen shelled edamame, thawed
  • 1/2 cup chopped fresh cilantro
  • 2 scallions, thinly sliced


In large bowl, whisk rice vinegar, sugar and 1/2 tsp. salt until sugar dissolves. Whisk in vegetable oil. Add broccoli slaw mix, edamame, cilantro and scallions to large bowl; toss and season.
