  • In a bowl, toss potatoes with peanut oil, coriander and sea salt. Arrange in a single layer on two baking sheets. Roast at 425 degrees until tender and browned, about 22 minutes; cool. Mix Greek yogurt, coriander and orange zest and salt. Dollop a spoonful onto each cooled potato and top with 1/2 tsp. salmon roe.
