Sweet Potatoes with Salmon Roe


  • 2 sweet potatoes, sliced into 1/2-inch rounds (ends discarded)
  • 2 tablespoons peanut oil
  • 1 teaspoon ground coriander
  • 1/4 teaspoon sea salt
  • 2/3 cup plain nonfat Greek yogurt
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon grated orange zest
  • Pinch salt
  • Salmon roe


In a bowl, toss potatoes with peanut oil, coriander and sea salt. Arrange in a single layer on two baking sheets. Roast at 425 degrees until tender and browned, about 22 minutes; cool. Mix Greek yogurt, coriander and orange zest and salt. Dollop a spoonful onto each cooled potato and top with 1/2 tsp. salmon roe.
