- 1 egg, beaten
- 2 tablespoons butter, melted
- 1 tablespoon lemon zest
- 1 8 1/2 ounce box corn muffin mix
- Blueberry jam
In large bowl, fold egg, butter and zest into muffin mix to form dough. On parchment-lined baking sheet, shape 1 into 4 1/2-inch round. Bake at 425 degrees until golden, 12 minutes. Quarter and serve with jam.
