Sunnyside Eggs with Cheesy Winter Greens

Ingredients

  • 3 tablespoons olive oil
  • 3/4 pound collard greens, chopped
  • 3/4 pound mustard greens, chopped
  • 1/2 cup heavy cream
  • 1 shallot, sliced
  • 1/2 cup grated Parmesan
  • 6 eggs
  • 1/4 teaspoon crushed red pepper

Preparation

In large skillet, heat oil over medium. Cook greens, cream and shallot, 5 minutes. Stir in cheese; season. Crack eggs over greens; cover and cook over low until whites set, about 10 minutes. Sprinkle with crushed red pepper; season.
