Ingredients

  • 2 pounds yellow tomatoes
  • 2 slices white bread, torn
  • 1 yellow bell pepper, seeded
  • 2 shallots
  • 1 jalapeno
  • 3 cloves garlic
  • 1 1/2 teaspoons lemon zest
  • 1/2 cup lemon juice
  • 1/2 cup EVOO, plus more for dizzling
  • Ice cubes
  • 3 ribs celery with leaves, finely chopped

Preparation

In blender, puree tomatoes, bread, pepper, shallots, jalapenno, garlic, lemon zest and juice and 1/2 cup EVOO; season with salt. Divide among 6 bowls; add ice and stir to cool. Drizzle with EVOO; garnish with celery and celery leaves.
