Sunny Gazpacho

Ingredients
- 2 pounds yellow tomatoes
- 2 slices white bread, torn
- 1 yellow bell pepper, seeded
- 2 shallots
- 1 jalapeno
- 3 cloves garlic
- 1 1/2 teaspoons lemon zest
- 1/2 cup lemon juice
- 1/2 cup EVOO, plus more for dizzling
- Ice cubes
- 3 ribs celery with leaves, finely chopped
Preparation
In blender, puree tomatoes, bread, pepper, shallots, jalapenno, garlic, lemon zest and juice and 1/2 cup EVOO; season with salt. Divide among 6 bowls; add ice and stir to cool. Drizzle with EVOO; garnish with celery and celery leaves.
