Summer Spaghetti with Zucchini & Mint

Think beyond basil! Less expected herbs like mint, chives or thyme wake up classic Italian pastas.

  • 1 zucchini, cut into half moons
  • 12 oz. cherry tomatoes, halved
  • 1/4 cup olive oil
  • 1/4 cup tomato paste
  • 3 cloves garlic, finely chopped
  • 1/2 tsp. crushed red pepper
  • 1/2 cup white wine
  • 8 oz. spaghetti, cooked, plus 1/4 cup cooking water
  • Sliced fresh mint
  • Grated ricotta salata


In pot, cook first 6 ingredients over medium, stirring often, until softened, about 8 minutes. Add wine; bring to a simmer. Stir in pasta and water; season. Garnish with mint and cheese.
