Strip Steak with Roasted Tomatoes & Blue-Cheese Butter

Ingredients
- 1 stick butter, softened
- 2 tablespoons Gorgonzola
- 1 1/2 pounds cherry tomatoes
- 8 cloves garlic, smashed
- 3 tablespoons olive oil
- 2 strip steaks (1 lb. each)
Preparation
In bowl, mix butter and cheese. In baking dish, toss tomatoes, garlic and 2 tbsp. oil; season. Roast at 450 degrees until blistered, 25 minutes. Brush steaks with remaining oil; season. In skillet, cook steaks over medium-high, 3 to 5 minutes per side for medium-rare. Let rest 5 minutes. Serve sliced steak with veggies and butter.
